Healthy Recipe: Chunky Peanut Banana Smoothie

We love this Chunky Peanut Banana Smoothie! It can be a great way to start the morning as a filling and healthy recipe for breakfast or a fantastic afternoon indulgence on a sunny day as a sweet and creamy treat. With only as many ingredients as you can count on one hand, this delicacy is almost as easy to make as it is to enjoy, while still being an excellent source of protein, vitamins, and minerals. Without sugar, the smoothie is deliciously sweet, and the chunks of peanut and oats give it a thick, ice creamy texture. Wonderful!


Ingredients:


  • 2 bananas

  • Peanuts

  • Oats, plain

  • Milk (dairy, soy, almond, rice – whatever variety you prefer)

  • 2 small cubes of ice (optional)


The night before, peel the bananas, seal them into a Tupperware container, and put them into the freezer. If prepping the bananas early, ice cubes will likely not be necessary. Another option is to put the bananas into the freezer, with or without peels, about an hour before making the smoothies, in which case, a couple of ice cubes will enhance the texture.


Remove bananas from freezer and peel if necessary. Break them in half and drop them into the blender. Add desired amount of milk to the bottom of the blender. Add a handful or two of peanuts. Add a handful or two of oats. Add ice cubes if desired. Blend. The mixture may need to be stirred a time or two depending on how frozen the bananas are. Once blended, pour and enjoy!


This recipe makes one medium smoothie.
